2 medium sweet potatoes, rinsed & sliced 1/8 inch thick
1 tablespoon extra-virgin olive oil
1/2 teaspoon sea salt
1 lime, cut into wedges, for serving
Preheat oven to 400 degrees, with racks set in the center & lower positions. Drizzle with oil, toss & lay the sweet potato slices on baking sheets in a single layer; i used two sheets at a time. Bake, flipping once, until centers are soft & edges are crisp, about 15 to 20 minutes. Sprinkle with salt, and serve with lime wedges!
A mandolin or a hand-held slicer is ideal to get the potatoes a consistent thinness, though a sharp knife works fine as well.
